Shopping list, for 4 people
The rice
1 pack (500g) sushi rice
2 tablespoons apple cider vinegar
1 teaspoon salt
1 teaspoon sugar
Fish and marinade
400g of salmon fillet
4 tablespoons soy sauce
2 tablespoons olive oil
1 teaspoon fish sauce
black pepper, to taste
Sauce
50g mayonnaise
the fish marinade
squeeze of lemon
Toppings
cucumber, tomato,
paprika, radish,
wortel, edamame beans,
avocado, mango,
beats, pumpkin
spring onions, sesame seeds,
a shredded nori sheet.
Looking for an easy recipe for Pakjes night we came across the Poke Bowl. Not surprising, because this Street Food from Hawaii is globally hip! It's been here for a while now and it won't go away anytime soon. Understandable, because it is super tasty, healthy, quickly prepared and easy to make. You just exchange what you don't like for something else. The ideal dish for Sinterklaas evening, nice and light because a lot of sweets follows!
How to make our Poke Bowl
Clean the vegetables.
Wash the vegetables well.
Cut the vegetables long or short but thin.
Boil the rice as indicated on the package (we make only for two because this is a trial run)
Weigh the rice, if neccesary
Pour the water into the pan.
Add the rice and bring to the boil.
Lid on the pan and simmer.
Turn off the heat and leave the pan where it is with the lid on for 15 minutes
Keep the pan closed!
Place the salmon in the marinade.
Put the mayonaisse and lemon in a bowl already.
How to grill the salmon
Heat the grill pan and put in the salmon.
Grill the salmon 3 -4 minutes on each side, pink is okay.
Cut the salmon into thin strips.
Stir the fish marinade into the mayo.
How to dress de bowl
Stir the rice for a moment.
Spoon the rice into the bowl(s).
Put the veg on top of the rice.
Add the salmon and the sauce.
Sprinkle with spring onions and sesame seeds.
