125g butter (room temperature)
125g dark brown sugar
1 tablespoon gingerbread spice
250g all-purpose flour
1 teaspoon baking powder
35ml buttermilk
Fondant icing:
red, yellow, orange and brown

Tomorrow, Thanksgiving will be celebrated by everyone in America. On this day, adults and children alike take extra time to reflect on what they are grateful for. The children make fun crafts at school. In the evening, there is an extra delicious meal with the whole family, followed by watching sports on TV. Tomorrow, we will make tea, bake very tasty cookies today, and read a fun book aloud to the mini-monsters. We will be grateful for that coziness tomorrow too!

Here's how you make gingerbread letter cookies

Stir the flour, baking powder and spices together.

Sift the mixture into a large bowl.

Mix butter, brown sugar and buttermilk until creamy.

Scrape the edges of the mixing bowl clean.

Gradually add the flour mixture.

Knead for 5 minutes by hand until smooth.

Place the dough into a clean bowl.

Cover the bowl and place it in the fridge for 30 minutes

While you wait for the dough to cool, you can already lightly grease the baking tray and sprinkle it thinly with flour

Knead the dough briefly.

Roll it to 1cm thickness.

Cut the letters from the dough.

Place the cookies on the baking tray.

Preheat the oven to 17C and then you slide the baking tray into the middle of the oven

Bake the cookies for 8-10 minutes.

Cool on the tray and then on the wire rack.

Thinly roll out the fondant already.

While the cookies are cooling you can cut out all the icing letters already

Stick the letters with a drop of water onto the cookies.

Make your serving platter pretty and you are ready to go!
