Shopping list for 6 mini apple cakes
40g sifted flour
¼ teaspoon baking powder
120g sifted icing sugar
45g almond flour
4 free range egg whites
65g butter
1 Elstar apple, quartered then sliced
With the newly harvested Elstar apples we want to make something extra delicious on this Sunday! We choose to make mini apple cakes, the mini monsters have a hard time waiting, the apple cakes smell really very good!
How to make mini-apple cakes
Sift flour and baking powder into a bowl.
Add the icing sugar and the almond flour.
Stir until combined.
Melt the butter on low heat.
Take the butter from the heat when just browning.
Separate the egg whites, add to the mix.
Beat the egg whites into the mixture.
Preheat the oven to 170°C
Beat in the cooled butter too.
Let the batter rest 5-10 minutes.
Grease the baking molds.
Fill up to 2/3 with batter.
Press the apple slices straight up, diagonal into the batter
Bake the cakes for 12-15 minutes.
Allow the cakes to cool in the molds.
Tap the apple cakes from the molds when cooled
