150g unsalted butter
55g soft brown sugar
80ml maple syrup
3-4 large bananas
155g plain flour
1 teaspoon baking powder
a pinch of salt
230g fine sugar
4 free-range organic eggs
1 teaspoon vanilla extract
optional: ice cream or whipped cream
Because the snazzie Dads love bananas we make them Gordon Ramsay's Banana upsidedown cake today, for Father's Day. They will surely love it because it is very sweet and sticky. Only a tiny criticism, we double the banana's next time!
How to make the Babnana Upsidedown Cake
Preheat the oven to 180°C / 160°C Fan
Grease a 20cm baking tin with 50g butter.
Stick baking paper in the tin the grease it again.
Cut the banana's lengthwise in three slices.
Place the banana's flat side down in the baking tin.
Put the brown sugar and the maple syrup in a pan.
Let the sugar dissolve in 5 minutes, on low heat.
Pour the syrup mixture over the bananas and set aside.
How to make the cake batter
Stir flour, baking powder and salt together
Mix butter and sugar creamy.
Mix in the eggs 1 by 1.
Mix until all is well combined.
Sift in the flour mixture in parts.
Fold flour mixture and vanille into the batter.
Spoon the batter on top of the banana's.
Slide the baking tin into the warm oven.
Bake the cake golden brown in 45 -50 minutes
Lift the cake out of the tin by the baking paper and turn.
Serve the cake with ice cream or whipped cream, it is a party!
