zucchini, tomatoes, leek, bell pepper, onion
A dash olive oil
50g bacon cubes
4 organic eggs
50 ml whole milk
A handful mature Gouda cheese, grated
Sea salt and pepper to taste

Delicious and easy, we make a farmer's omelet on the weekend—it's always tasty! Make it for lunch or enjoy it with some fresh bread slices in the evening. You get everything in one go, lots of fresh vegetables; we use whatever's in the fridge. Then add bacon and Gouda cheese, which could just as easily be bacon OR cheese. You can also leave both out. The choice is yours!
How to make a Farmers omelet
Wash and dry the vegetables.
Cut the spring onion into rings.
Cut pepper, leek and zuchini finely.
Add the oil to the pan and heat it over medium heat
Fry the bacon until it's brown.
And also crispy!
Drain on kitchen paper.
Fry the vegetables in the same pan.
Fry the onion and tomato with it.
Add the bacon back to it as well.
Beat the eggs with the milk.
Grind sea salt and pepper in it.
Add the cheese as well and stir.
Pour the mixture into the pan.
Allow the omelet to cook gently.
Slide the farmer's omelet out of the pan when it is just dry on top.
Serve the omelet with fresh bread, butter and a green salad on the side.
