Shopping list for 2
4 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon clear honey
sea salt & freshly ground black pepper
1 teaspoon Soy sauce
6 slices of bread
100g thinly sliced grilled chicken
100g of bacon, sliced
2 free range eggs, hardboiled
1 red onion
2 large vine tomatoes or 6-8 cherry tomatoews
1/2 a bag of mixed lettuce
Tasty, freshly made mayonnaise is easy to make at home, with a great recipe by Michel Roux Jr. But if you want to make it even easier for yourself, you can buy a jar - for instance Hellman's reduced fat mayo and quickly turn it into a honey-mustard sauce. If you make fresh mayo then stir in only soy sauce and honey.
How to make a grilled chicken club sandwich
Wash and dry the lettuce, cut the tomatoes and slice the onion in rings.
Put 2 tablespoons of mayonnaise in a bowl.
Stir in mustard, soy sauce and honey.
Season with sea salt & black pepper.
Boil the eggs 10 minutes.
Fry the bacon crispy.
Fry the onion rings too.
Slice the bread.
Spread generously mayo on the bread.
Top it with bacon, tomato and onion.
Put on a slice then chicken and egg.
Put on lettuce then top it with a slice of bread.
Cut the sandwich in half and stick in a skewer.
