200g soft butter
200g caster sugar
4 free-range organic eggs
2 teaspoons vanilla extract
50 ml milk
200g icing sugar
tablespoons water
3 drops lemon juice
multi coloured sprinkles
Today we're throwing a party for a little monster who doesn't like whipped cream. What does he like? Vanilla cake. icing and sprinkles, we can do that. We bake a sponge cake with sprinkles. It's a much-loved retro birthday treat in the UK, that is making a comeback. Isn't that lucky?
How to make a sponge cake with sprinkles
Preheat the oven to 180°C / 160°C fan and butter the baking tin
Beat the butter with the sugar until creamy.
Beat in the eggs one by one and then the vanilla extract.
Sift the self raising flour into the butter mixture and fold it in.
Fold in the milk as well and then cover the mold with waxed paper.
Spoon the bayyer into the baking tin.
Bake the cake for app. 40 minutes.
Let it cool in the baking tin.
When the cake has cooled you make the icing
Place a wire rack on waxed paper nearby
Sift the icing sugar into a bowl.
Stir in lemon and add water by the spoon.
Pour the icing over the cake.
Spread the icing evenly over the cake
Scatter lots of sprinkles over the wet icing.
