Shopping list
Salad
½ cucumber
½ bunch radishes
4 small tomatoes on the vine
1 red onion
50g black olives
handful fresh basil
arugula
extra virgin olive oil
100g pecorino romano,grated
Dressing
120g Greek yogurt, non fat
1 tablespoon honey
1 tablespoon vinegar
½ teaspoon of garlic
sea salt & freshly ground black pepper
2 tablespoons chives

Today we make a typical Italian salad, vegetarian and healthy, with lots of fresh vegetables. How typically Italian the dressing with Greek yogurt is (not really we think!) :)) is debatable at the very least. Anyway, the salad is very tasty!
How to make the Italian Salad
Wash and drain the vegetables, cut them into slices or wedges then put them in the refrigerator.
For the dressing, stir the yogurt with honey, vinegar, garlic, sea salt & freshly ground black pepper, taste then put it in the fridge.
Place the arugula in a large bowl, scatter the veg on top, then gently toss it and sprinkle the olives on top.
Serve the grated cheese and the dressing on the side, so everyone can add what they like.
