200g self-raising flour
1 teaspoon baking powder
1 free range organic egg
300ml milk
a knob butter, melted
150g blueberries
sunflower oil or a little butter, for cooking
maple syrup, to serve
On our Sunday off we make a delicious recipe from the United States: pancakes with blueberries and maple syrup. In America the pancakes are small, thick and very light and fluffy. Very tasty and with the thin syrup over it, deliciously sweet!
How to make Blueberry Pancakes
Stir the flour with the bakingpowder and make a well.
Add the milk to the egg.
Beat the mixture until combined and frothy.
Pour the mixture in parts into the flour.
Stir it until combined using a whisk.
Melt the butter in a saucepan.
Add the butter to the batter.
Weigh 75g of blueberries.
Wash the berries.
Allow to drain well.
Stir the berries into the batter.
Heat the frying pan over medium heat en melt some oil or butter in it
Ladle 3 heaps of batter into the pan.
Flip over if you see tiny bubbles on top.
Fry the other side golden brown.
Maple syrup is sold at AH, Jumbo, Plus, Dirk and Bas.
Place the pancakes on a plate and serve with syrup and blueberries.
