Shopping list (8 madeleines)
100 grams of unsalted butter, softened
100 grams of golden caster sugar
100g self raising flour
2 large organic free range eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
100 grams of cherry or strawberry jam
1 tablespoon of water
100g grated chocolate
4 (glazed) cherries, halved
or 4 strawberries, halved
The Great British Bake Off is a much loved television program here, we watch all the shows. The home bakers, the celebrity Brits and the children's version, so much fun! Also, the celebs bake for a very good cause. Prue Leith's recipe for British Madeleines comes from their website, but we've adapted the recipe slightly. The little monsters don't like desicated coconut and glacé cherries, but cake coated with grated chocolate and fresh strawberries? Delicious!
How to make English Madeleines
Preheat the oven to 200°C / 180°C Fan and grease the baking molds
Put butter and sugar in a bowl.
Mix it until pale and creamy.
Beat in the eggs.
Mix in the vanilla.
Add flour and baking powder.
Mix it in briefly.
Fill the molds to 2/3.
Bake the cakes for 8-10 minutes.
Let cool in the mold for 5 minutes.
Tap out of the mold and let them cool.
While the Madeleines cool completely you make the decoration
Warm the jam with 1 tablespoon water until spreadable.
Meanwhile grate the chocolate coarsly.
Brush the liquid jam on top and all around the cakes.
Roll and dip the Madeleines in the grated chocolate.
Place a halved strawberry on top of the cakes.
Optioneel serve the Madeleines with whipped cream. Enjoy!
