a roll puff pastry
2 large apples (Elstar)
raisins, to taste
1 tablespoon fine sugar
1 teaspoon of ground cinnamon
1 organic egg (S)
Optional
125ml whipping cream
1 tablespoon of sugar
Apple pie is traditionally eaten a lot in the United States, especially on July 4th, Independence Day. Today we are making mini apple pies, which we think they don't know in the USA (maybe don't want to know either, they are too small). But we really enjoyed making them, and with or without whipped cream, they are delicious!
Here is how to make Mini Apple Pies
After cutting out the cups we have 22 and enough dough left to roll out the strips, but after that not a tiny crumb of dough is left!
Peel the apples, cut them into small pieces.
Put the apple into a bowl with the raisins.
Add sugar to the fruit and fold it in.
Fold the cinnamon into the apple mixture.
Grease a large mini cupcake mold.
Roll out the puff pastry.
Cut out small circles.
Press the circles gently into the baking tin.
Press the cut off dough together and set aside.
Fill the cups with the apple raisins mixture first.
Roll out the cut off dough and cut it into thin strips.
Preheat the oven to 200°C
Beat the egg.
Brush egg onto each rim of the pie.
Press the strips on top en brush too.
Bake the Mini Pies for 15 minutes.
After baking for 15 minutes in the middle of the oven the Apple Pies are golden and cooked
Allow the pies to cool in the tin first.
Lift the pies from the mold with a pointy knife.
Allow the pies to cool completely on a wire rack
Whip the cream while the Apple Pies are cooling.
Serve the Apple Pies with or without cream, with a cup of tea or coffee.
