375g flour
240g unsalted butter
½ sachet baking powder (5g)
5 free range organic egg yolks
1 teaspoon vaniilla extract (optional)
1 free range organic egg yolk, to brush
extra butter, for greasing
The Gateau Breton is similar to the Dutch Boterkoek (Butter cake), but it tastes slightly different. The cake is quick and easy to make, so ideal for the weekend, with your tea or coffee. For the cake lovers among us, here is the recipe from Brittany.
How to bake a Gateau Breton
Weigh the flour and put it into a bowl.
Add the baking powder to the bowl.
Cut the butter into cubes and add them as well.
Separate 5 large eggs and add the egg yolks and vanilla.
Knead it by hand.
Into a smooth, elastic dough.
Grease the baking tin.
Place baking paper in the baking tin to make it easier to lift out the cake later
Flatten the dough a litlle.
Press the dough into the baking tin.
Make a pattern using a fork.
Beat the sixth egg yolk.
Preheat the oven to 180°C
Brush the gateau Breton with beaten egg.
Place the tin on the wire rack in the oven.
Bake the cake for +/- 35 minutes.
Let the gateau cool first in the tin, then on a wire rack.
Serve the Gateau Breton on roomtemperature.
