2 large bananas, peeled
2 organic eggs
4 tablespoons self-raising flour
½ teaspoon ground cinnamon
1 teaspoon unsalted butter
2 teaspoons vegetable oil

For Dutch National Pancake Day 2026, we've found a delicious and easy recipe. Today we're making baby pancakes with fresh fruit on the side. Let's see what delicious fruit we have on hand. Well, that's perfect: delicious apples and golden kiwis—a great combination!
How to make Baby Pancakes
Peel the bananas and cut into small pieces.
Puree the banana pieces in a blender.
Break the eggs into a sepertate bowl.
Add the self-raising flour and cinnamon to the bowl.
Beat it with a whisk until you have a fairly smooth mixture
Add the flour mixture to the banana puree.
Beat both mixtures into one smooth mixture.
Peel and cut 1-2 apples.
Fry the apples until soft in a knob of butter and set aside..
Melt 1 teaspoon butter and 1 oil in a frying pan.
Spoon 3 full tablespoons batter one by one into the pan.
Bake for 1-2 minutes until the edges are set.
Heat a plate in the oven
Flip the baby pancakes and fry for 1 minute more.
Slide the pancakes onto the hot plate and fry until the batter is used up.
Serve the baby pancakes with icing sugar, warm apple slices, and any other fresh fruit you have on hand!
