This delicious fresh cucumber / mint raita is an Indian side dish. When eating a spicy curry the raita works cooling because of the the yogurt.
How to make cucumber / mint raita
Peel the cucumber and chop it fine.
Strip the mint leaves from the stems, cut them finely.
Add the mint, salt and yogurt to the cucumber.
Stir until combined, cover the bowl then put it in the fridge.
The raita is ready in 10 minutes and it complements your curry.
