Shopping list for 12 cupcakes
250g caster sugar
250g butter (room temperature)
3 free-range organic eggs (room temperature)
1 teaspoon vanilla extract
250g self-raising flour
4 tablespoons of milk
500 ml double cream
4 tablespoons caster sugar
orange fondant icing
4 mandarins
Today we are making very delicious cupcakes with fresh mandarin oranges and whipped cream, fit for a king. Our king would surely love them, but we make half with and half without whipped cream. Because oh, those mini-monsters, they're fussy eaters!
How to make King's cupcakes
Make the batter
Mix butter with sugar.
Mix until pale and creamy.
Mix in the eggs, 1 by 1.
Mix in the vanilla.
Fold in the flour gradually.
Finaly fold in the milk.
Fold in until the batter is well combined
Preheat the oven to 175°C
How to bake the cupcakes
Place cases in the baking tin.
Fill the cases 3/4 with batter.
Bake the cupcakes for 15 - 20 minutes.
Let the cupcakes cool completely.
Meanwhile make the decorations
Peel the tangerines and wash the white skin off.
Make holes in the cupcakes.
Stick out orange icing circles.
Fill up the cupcakes with tangerine wedges.
Spread a little whipped cream on the cupcakes.
Stick on the fondant icing circles.
Pipe a rosette of cream on top of the fondant.
Let the whipped cream set a moment.
Stick a tangerine wedge in the cream on each cupcake.
