for the shortbread
250g plain flour
200g cold butter, cubed
100g golden caster sugar
¼ teaspoon vanilla extract
Caramel sauce
for the chocolate topping
50g butter
300g dark chocolate
25g white chocolate, melted (optional)
Another Chinese New Year cookie that isn't Chinese but fits in perfectly with the celebration is Millionaire's Shortbread. Because all good wishes in the Chinese New Year tradition have to do with wealth and gold, this biscuit should be a treat, the name definitely!
How to make Millionaire's Shortbread
Place the flour and the butter cubes in a big bowl.
Rub the butter into the flour until you have crumbs.
Add the sugar and vanilla and mix it in.
Mix the large crumbs until they are smaller.
Knead the mixture shortly by hand.
Until you have a supple dough.
Press the dough into the baking tin.

Smoothen the dough using the back of a spoon.
Bake the shortbread 45 - 50 minutes until golden and cooked.
Allow the shortbread to cool completely in the tin.
Make caramel according to recipe while the shortbread cools.
Divide the caramel evenly over the shortbread and smoothen it
Melt the dark chocolate au bain marie and pour it over the caramel.
Melt the white chocolate au bain marie, spoon it into a piping bag.
Pipe lengthwise straight white chocolate lines and pull a toothpick through.
Allow the chocolate to set completely.
Cut the Millionaire's Shortbread into squares. OH NO!
We forgot the baking paper, such bad luck, it is hard to get the short bread out of the mold in one piece! We make it in two pieces, we have no choice.
