Mini Banana Muffins
125g all-purpose flour
½ teaspoon baking soda
½ teaspoon cinnamon
2 ripe bananas
50g light brown sugar
2 teaspoons vanilla extract
55g Greek yogurt
60g butter, melted
Our little monsters think banana bread is the best breakfast ever. If they are allowed to take something tasty (but healthy!) to school on Fridays, they almost always choose banana bread.
Today we have a fun new recipe: we are making banana muffins, the mini version. They fit easily in their lunchboxes for school, and disappear in one bite. ;))) Curious to see if the little monsters like the mini muffins too.
Here is how to make Mini Banana Muffins
Stir together the flour, baking soda, and cinnamon.
Add the brown sugar and mix until smooth in 2 minutes.
Meanwhile melt the butter.
When the mixtere is nice and smooth ...
... you add the butter and mix it in briefly.
Add the flour mixture gradually to it.
Preheat the oven to 175°C
Fold the flour into the mixture by hand.
Place 24 paper mini-cups in the muffin tin.
Fill the cups to the rim with the muffin batter.
Bake the mini muffins for about 15-16 minutes until done.
Allow the muffins to cool a little.
The banana muffins taste best if they are eaten immediately.
So, these mini banana muffins aren't really suitable for taking to school. That's a shame, the little monsters prefer to take banana bread. But eaten right away with tea, everyone do likes them!
