Mini Chocolate Tartlets
175g unsalted butter
175g light brown sugar
3 free range organic eggs (L)
135g self raising flour
40g cocoa powder
½ tsp vanilla extract
Chocolate Buttercream
125g butter, (room temp.)
225g icing sugar
25g cocoa powder
30 ml boiling water, add per teaspoon
Decoration
chocolate sprinkles or mini-chocolates
Yesterday we baked mini tartlets with whipped cream and fruit and today we are baking mini chocolate cakes. The monsters are taking the cakes to school, for the St. John's Day picnic. There is something for everyone!
The children can choose from chocolate cakes with whipped cream or chocolate buttercream. Or the vanilla tartlets with whipped cream and fruit we made yesterday. They all look delicious so it will be very difficult to choose! (We bake half the recipe, for 15 cakes).
How to make the mini chocolate tartlets
Beat butter with sugar until creamy.
Beat the eggs as well until foamy.
Mix the eggs to the mixture.
Mix the vanilla into the batter too.
Sieve the flour and fold it into the butter mixture by hand
Fold the flour in gradually, in 3 parts.
Fold in the cocoa with the last part.
Finally, fold boiling water into the batter.
Preheat the oven to 170°C / 160°C Fan and place paper molds in a 24 mini cupcakes baking tin
Fill the molds up to 2/3.
Bake the cakes until cooked for +/- 18-20 minutes.
Meanwhile make the chocolate frosting
Stir sugar and cocoa together.
Beat the butter until creamy.
Sift the sugar mixture into the butter.
Mix until well combined.
Add the vanilla to the mixture.
Mix until the butter cream is blended well.
When the buttercream is a little stiff add boiling water per teaspoon, most likely you do not need all 30ml boiling water!
Spoon the buttercream in a piping bag and set it aside for now, because the cakes are ready!
Remove the cakes from the oven, check if they're done.
Allow the cakes to cool completely.
Pipe on whipped cream and sprinkle with chocolate.
Pipe chocolate buttercream on top of the remaining mini-cakes.
Decorate the mini-tartlets with sprinkled mini-chocolates.
