Shopping list (24 mini cupcakes)
125g caster sugar
125g butter (room temperature)
1 large free-range organic egg (room temperature)
1 teaspoon vanilla extract
125g self-raising flour, sieved
2 tablespoons milk
fondant icing, white and light blue
Today is Candlemas and we have been baking a lot of sweet winter cupcakes, mini sized, for school. The cupcakes are ready quickly and we keep the decoration simple, because we have to decorate a lot. But the mini monsters are a great help with cutting out fondant, so we're making good progress!
How to make Candlemas cupcakes
Bake the mini cupcakes as stated in the recipe.
Roll the light blue fonfant icing thinly.
Cut out circles to fit the cupcakes.
Stick the fondant on the cupcakes using a drop of water.
Kneadl the white fondant icing smooth.
Roll it thinly.
Cut out little doves.
Stick the little doves on the cupcakes.
Serve the little cupcakes with a cup of tea or coffee.
