panna cotta
3 gelatin leaves
250ml milk and 250ml cream
a vanilla pod
25g caster sugar
strawberry coulis
175g caster sugar
175 ml water
splash strawberry syrup (or liqueur)
350g strawberries
This easy to make recipe for panna cotta with a strawberry coulis is by British chef Simon Rimmer, whom you can see every Saturday on BBC 2. It looks stunning and tastes utterly delicious! Try this at home soon!
How to make the panna cotta
Soak the gelatin 10 minutes in cold water.
Cut open a vanilla bean, scrape out the seeds.
Place milk, cream, vanilla seeds and pod in a pan.
Add the sugar, bring it slowly to the boil.
Let the mixture cook gently for a minute, then remove it from the heat.
Remove the vanilla pod.
Squeeze the gelatin then add to the pan.
Dissolve the gelatin by stirring.
Pour the panna cotta into the molds.
Pour the water into a pan.
Add the sugar to the water.
Pour in the strawberry syrup as well.
Let the sauce simmer softly until the sugar has dissolved.
Remove the sauce from the heat, blend in 175g strawberries.
Rub the strawberry sauce through a sieve to remove the pips.
Stir the remaining strawberries into the sauce and let it cool. Place the panna cotta and the sauce into in the fridge to set.
Pour some strawberries with sauce over the panna cotta, serve the rest of the sauce on the side.
