150g butter (room temperature)
150g fine sugar
1 free range egg (room temperature)
1 teaspoon vanilla essence
375g plain flour
1 teaspoon baking powder
coloured fondant icing

Today we are cosily baking rain clouds and umbrella's because it can not always be sunny weather ;) For the umbrella's we use a cookie-cutter but the clouds we draw and cut from an old plastic palcemat, then we cut them out of dough.

How to make the Rainy Day biscuits

Cut the butter into cubes.

Beat butter and sugar until creamy.

Beat in the egg and the vanilla.

Weigh the right amount of flour.

Stir the baking powder into the flour.

Sieve it on the butter mixture.

Mix until combined.

Knead the dough quickly by hand.

Form a smooth ball of dough.

Wrap the dough in cling film.

Place the dough minimal 1 hour in the refrigerator then preheat the oven to 170°C.

Roll the dough on baking paper.

Cut out 1 cm thick biscuits.

Bake the biscuits for 12-15 minutes.

Allow to cool on a wire rack.

Cut clouds, a sun and umbrella's from fondant, stick them on with water.

Draw faces on the biscuits with the edible writing pens.

Now it is dry again outside we can have a cozy tea party!
