Shopping list for 18 cupcakes
140g unsalted butter, softened
200g soft golden brown sugar
60ml black treacle and 60ml golden syrup
2 free-range organic eggs + 2 egg yolks
300g plain flour
3½ teaspoons gingerbread spices
240 ml milk, warmed
50g brown fondant icing
50g icing suger
3 drops of lemon juice
1 recipe Suisse vanilla buttercream

It's winter, time for delicious spicy baked goods like these gingerbread cupcakes. We also make vanilla buttercream and small fondant gingerbread men. Because then these cupcakes look super cute as well. Then make some tea and it's immediately cozy!
How to make gingerbread cupcakes
Preheat the oven to 190°C / 170°C Fan
Place butter and sugar in the mixer and mix until creamy.
Add the eggs and the yolks to the mixer bowl too.
Measure the molasses and add it as well
Finally measure the maple syrup and add to the bowl also.
Turn the mixer back on and beat it all together until it is well combined and smooth
Warm the milk on low heat.
Sift the flour with baking powder and spices.
Stir it all together.
Now mix the dry ingredients with the wet ones and do it in 2 halves, not using the mixer but using a spoon or spatula
Fold it half the flour mixture. then half the warm milk
Fold it in and do this again and then fold it in again
Fill the paper cases with batter (we made a ½ recipe).
Bake the cupcakes for +/- 25 minutes.
Insert a skewer in the middle of a cupcake to check whether they are done, then allow the cupcakes to cool in the baking tin
In the meantime, make vanilla buttercream, you can also do this a day in advance
Roll out fondant icing while the cupcakes cool completely.
Cut mini gingerbread men out of fondant icing.
Stir icing sugar with drups of water and lemon juice smooth.
Pour the thick icing you stirred into a piping bag.
Pipe accents on the gingerbread men with the thick icing.
Pipe vanilla buttercream rosettes on top of the cupcakes.
Press a gingerbread man on each butter cream rosette.
