250g icing sugar
2 free range organic eggs whites
3 drops peppermint essence
15 chocolate smarties
These peppermint polar bears are cute to present on Christmas Day as after dinner mints. But if you pack them in a nice box they make a lovely Chritmas present!
How to make Peppermint Polar Bears
Sieve the icing sugar into a big bowl.
Separate the egg yolks from the whites.
Beat the egg whites lightly
Add a little egg white to the sugar.
Stir the egg whites a little bit at a time into the sugar, stop adding when the dough feels like soft plasticine
Stir in 3 drops of peppermint flavour.
Roll 15 little balls between your hands.
Place them on sugar dusted baking paper.
Flatten the balls, prick in eyes, then roll 30 ears.
Roll 15 little balls (snouts) and press in a Smartie.
Place the tray with polar bears 3 - 4 hours in the fridge to dry.
In a tin you can keep the polar bears up to 1 month.
