1 roll ready made pizza dough
For the topping
1 small red pepper
1 small aubergine
1 small courgette
2–3 tablespoons olive oil
pinch of sea salt
300g smooth passata
To garnish (optional)
fresh basil leaves
grated parmesan
olives, to taste
For the pesto
40g almonds
60g parmesan, grated
a garlic clove
teaspoon salt
100 ml olive oil
50g basil leaves
We had a big plan for today, Pizza all'ortolana! We make our own dough, we make pesto, we cut the vegetables and we prepare the pizza. Then bake for 20 minutes for 15 minutes and enjoy good food! But that did not happen ... We receive an unexpected visitor, very nice, but after that there is a lack of time. Then just run - to AH for ready-made pizza dough - but we do the rest ourselves!
How to make pizza all'ortolana (pizza with things from the vegetable garden)
Since the pizza dough is ready we start with the pesto
You need these five ingredients.
Place the almonds in the blender.
Grate the parmesan.
Add it to the blender.
Press the garlic and add it too.
Pick the basil leaves.
Shred them then add them as well.
Finally add the olive oil.
Blend until all is combined.
Transfer to a jar and close it.
Put the pesto aside until later.
Make the topping and assemble the pizza
Wash and dry the vegetables.
Cut them not too small.
Place them in a large bowl.
Spinkle with sea salt
Pour the olive oil on.
Stir the veg to coat.
Roll the edge of the pizza dough in.
Drizzle some olive oil on the dough and the rim
Pour the passata on it.
Spread it on the pizza.
Spread the vegetables on top.
How to bake the pizza
Preheat the oven to 200°C - sprinkle cheese on the pizza and drizzle with olive oil.
Bake the pizza in 15 - 20 minutes golden brown.
Serve the pizza with parmesan and basil leaves.
Serve the Pizza all'ortolana wth pesto, cheese and olives on the side, buon appetito!
