Shopping list for 2 people
2 large free-range organic eggs
1 tablespoon sesame oil
4 cloves garlic, minced
1 tablespoon freshly grated ginger
150g noodles
150g chicken fillet
110g shiitake mushrooms
1 tablespoon low-sodium soy sauce
1 carrot, julienne cut
2 spring onions, cut into thin rings
1⁄2 liter chicken stock, low sodium
100g spinach
Ramen is a delicious Japanese soup that is currently very popular worldwide. We go for a low moisture/high vegetable ratio ;)) type of soup ;)) Also we do not boil the chicken but fry it. We prefer it that way, but do mind this is not traditional. Neither is the stock cube and also: a little bit of your own input is never a bad thing.
How to make Ramen
Bring the eggs to the boil and let boil for 1 minute.
Cover the pan, set it aside for 8 to 10 minutes and let cool.
Wash and cut the vegetables, grate the fresh ginger and the garlic.
Cook the noodles as is instructed on the packaging.
Do not peel the eggs until they have completely cooled
Heat the pan with the sesame oil
Bak ginger and garlic until fragrant, for 1-2 minutes.
Add the chicken, fry until golden and remove from the pan..
Add soy sauce to the pan and fry the shiitake until soft.
Add the chicken brith, spring onions and carrot.
Bring the mixture to a boil, reduce the heat and simmer for approximately 10-12 minutes
Let the spinach simmer and wilt with it, for the last 1 to 2 minutes,
Spoon the soup into a bowl and place chicken and egg on top.
