100g butter - room temperature
100g icing sugar, sifted
200g cream cheese - room temperature
1 teaspoon vanilla extract
a drop green food colouring
mini almond cookies
green sprinkles
golden sprinkles
Today we are making petit fours with delicious ready-made mini almond cookies. Very easy! Because it basically comes down to you only having to make the cheesecake buttercream. To still have some fun in the kitchen, we are making it in two colours. Not because the little monsters don't like green buttercream, mind you ;))
How to make the St. Patrick's Day petit fours
Mix the butter until it is creamy.
Sift in the icing suger.
Mix it in and then mix in the vanilla.
Add the cream cheese to the mixture.
Mix in the cream cheese until it's smooth and creamy.
Divide the buttercream between 2 bowls.
Stir green colouring into one half.
Spread out the biscuits.
Scoop balls of buttercream.
Press the balls on the biscuits.
Dip, the petit fours in the sprinkles.
Allow the petit four to briefly set in the refrigerator
Repeat the process with the green cheesecake buttercream.
Store the biscuits in the refrigerator until serving.
