400g self-raising flour
55g butter
200ml milk
300g of sugar
4 free-range eggs
pinch of salt
1 teaspoon vanilla extract
500g strawberries
1/4 l whipped cream
1 sachet of klopfix
Kids and mothers from the 80s know her well. Strawberry Shortcake was a favorite cartoon character then, on TV. She is named after a favorite cake in America. I got the recipe from a good friend there. We start with the cake (sponge, I mean).
How to make Strawberry Shortcake
Pour the milk into a pan, melt the butter in it on low heat.
Brake the 4 eggs in a big bowl.
Whisk the eggs +/- 5 minutes with a mixer until they are fluffy.
Add the sugar and mix 5 minutes, until it's fluffy again.
After beating 5 minutes the colour is pale.
After mixing 10 minutes it looks even paler.
Add te vanilla essance, mix it in quickly.
Weigh the right amount self-raising flour.
Add salt, Turn off the butter/milk and let it cool.
Sift the flour and add it bit by bit, mixing well in between.
Mix on the lowest speed to prevent dust clouds.
Especially when you add the last flour, but once in mix at high speed for a minute.
Now add the cooled butter/milk in small portions.
It whisks a lot better now! Wisk in as much air as you possibly can.
Preheat the oven to 175°c.
You see bubbles in the batter.
Grease the baking form.
Divide the batter over two forms.
Fill both baking forms up to 2/3.
Place the baking forms in the middle of the oven en bake the cakes for +/- 40 minutes.
Clean the strawberries and slice them. Keep six small ones aside.
Cut the cake's top and bottom crust off thinly! Divide the cake in 3 slices lenghtwise, using a sharp knife.
Use a cutter or glass to cut circles out of the cake.
Whisk the cream until stiff with the sachet klopfix.
Spread cream on half the cake circles
Cover the cream with strawberries, followed by cream.
Press the remaining cake circles on and spread cream on top. Half the six strawberries and put them on the cakes.
What decadent cakes they are! In the USA they don't count calories. But the cakes taste very good, the kids love them!
