Shopping list
180g plain flour
¼ teaspoon baking soda
½ teaspoon baking powder
60g caster sugar
a pinch of salt
1 teaspoon vanilla extract
2 tablespoons sunflower oil
½ a free range organic egg, beaten
1½ banana

At the end of our lion and tiger month, we bake mini banana cupcakes. To keep them with the theme, we make cute tigers. In one bite, the tigers are gone, with or without buttercream!

How to make mini banana cupcakes

Preheat the oven to 180°C then place 24 mini cupcake cases in a mini cupcake tin

Place the flour in a large bowl and add both baking powders.

Also add the sugar and the salt.

Stir all ingredients together until they are well combined.

Stir all the wet ingredients together

Add the vanilla to the egg.

Add the oil too.

Mash the bananas.

Stir all until well combined.

Add the wet to the dry ingredients.

Stir it all together quickly.

Fill the cases to ¾ with batter.

How to bake the cupcakes

Bake the cupcakes in 15 minutes light brown.

Allow to cool 5 minutes in the tin.

Then cool completely on a wire rack.

Melt two small blocs of chocolate au bain marie

Draw chocolate faces using a wooden skewer.
