Tuna and Noodles Poke Bowl

Shopping list
100g dried noodles
50g green beans, blanched
2 free range organiceggs
1 sping oninon, cut into rings
100g cherry tomatoes, halved
2 baby cucumbers, halved
85g canned tuna, drained
20g pitted kalamata olives
½ clove garlic, crushed
2 tablespoons olive oil
sea salt & freshly ground black pepper

When we want a quick, easy to prepare meal, we make a poke bowl. It has everything in it, so you eat healthy and we love fresh vegetables. There is little cooking, some cooling and a lot of washing involved. :)) You stir a dressing and your meal is ready, ideal on busy days!

How to make a Tuna & Noodle Poke Bowl

First make the noodles

Bring a pan filled with water to the boil.

Add the noodles to the water and stir until loose.

Turn off the heat and leave the pan.

After 4 minutes, drain and rinse the noodles.

Prepare the beans.

Wash the beans thoroughly.

Cook the beans al dente in 8-10 minutes

Allow the beans to cool completely and boil the eggs for 7 minutes or to taste

Cool the egss under the cold tap.

Wash the remaining vegetables in cold water.

Cut, peel and crush all that needs it.
 
 

Stir the oil and garlic with salt and pepper.

You can pour some dressing over the noodles in advance, drizzle it last minute on the top of the veg or serve it on the side

Place the noodles in large bowls.

Arrange the tuna, vegetables and the egg on top.
