Shopping list
100g green beans, trimmed
2 free range eggs
2 tablespoons mayonnaise, light
8 baby gherkins, chopped
½ teaspoon dried mixed herbs
2 cans of tuna in spring water
2 large tortilla wraps
handful mixed lettuce + 2 tomatoes
40 grams black olives, sliced
freshly ground black pepper

This delicious tortilla wrap filled with a Niçoise salad is a recipe from The Hairy Bikers' slim line program (BBC). A fun summer recipe because you can easily pack the wraps to take on a picnic, only in a cooling bag of course.

How to make a Tuna Niçoise wrap

Boil the eggs for 7 minutes.

Boil the beans 4 minutes.

Dunk them in ice water.

Place the tuna in a bowl.

Fry the wraps briefly on the griddle

Fold in mayonnaise, gherkins, hebs and salt & pepper.

Place lettuce on the wrap, top with the tuna.

Add the beans and garnish with olive, tomato and egg.

Now all you have to do is decide: serve the wraps flat or rolled up to take on a picnic :)
