4 to 6 carrots
4 sweet potatoes
2 tablespoons unsalted butter
170g pitted dried prunes
140g dried apricots
1 medium apple, in pieces
75 fresh orange juice
65g cup maple syrup
2 tablespoons fresh lemon juice
1 tablespoon brown sugar
½ teaspoon kosher salt
1 teaspoon ground cinnamon
For Chanukah, we're making tzimmes, a typical Jewish dish traditionally eaten at Passover. But these days, it's also made for Hanukkah, and we love it. It's also delicious for little monsters ;)) With fresh and dried fruits, it's fresh and sweet.
How to make Tzimmes
Scrub the sweet potatoes firmly clean.
Peel the carrots and cut in pieces,
Bring water to a boil and cook the potatoes for 10 minures
Add the carrots to the pan and cook for another 10 mins.
Drain the potatoes and carrots in a colander, peel the potatoes once they have cooled slightly and set potatoes and carrots aside
Peel and cut the appel,
Juice the oranges.
Juice the lemon.
Heat the butter in the frying pan.
Add the apricots and prunes.
Add the apple and orange juice.
Then add maple syrup and lemon juice.
Followed by the brown sugar and salt.
Sprinkle the cinnamon over the mixture.
Let the mixture simmer softly for 2 minutes.
Finally add the sliced potatoes and the carrot pieces.
Heat the Tzimmes through until hot and then serve it.
