Shopping list for 24 mini cupcakes
125 grams fine granulated sugar
125 grams butter (room temperature)
1 1/2 free-range organic eggs (9-room temp.)
1 teaspoon vanilla extract
125 grams self-rising flour, sifted
2 tablespoons milk
Decorations
Fondant icing, orange
125 ml double cream
1 tablespoon sugar
sprinkles
We are baking mini cupcakes for Thanksgiving; the little monsters love them! The cupcakes are small, so the kids won't get too much, right after school. We make the little cakes exactly the way they like them best: vanilla flavor with fondant icing and sprinkles. Our little monsters are very grateful for the cupcakes!
Bake the cupcakes with our recipe.
Roll out the icing thinly.
Cut out circles
Stick them onto the cupcakes.
If you sprinkle icing sugar on your work surface before rolling out the fondant, you can stick on the circles with a drop of water
Beat the double cream with the sugar until stiff peaks appear
Pipe cream rosettes on top of the cupcakes.
If you have too many: set aside without cream.
Scatter sprinkles over the cupcakes.
