200g fresh strawberries
75g caster sugar
1 teaspoon lemon juice
Blondies with strawberries and clotted cream are a favorite here! We often make recipes with strawberries in the summer. Before you know it, the strawberry season is over, so we're making the most of it while we can!

Here's how to make strawberry compote



Wash the strawberries and let them drain.
Remove the hulls and cut large strawberries in half.
Add the sugar to a pan ad add the strawberries and lemon juice.
Place the pan on medium high heat and melt the sugar.
Gently stir the fruit now and then.
Let the fruit simmer gently for 10-15 minutes.
The fruit should be soft but still hold shape.
Remove the pan from the heat and let the strawberry compote cool completely



Spoon the compote into a sterilized jar and place it in the fridge.
Tomorrow we bake the Blondies!
