240g yogurt or quark
1 teaspoon vanilla extract
60g caster sugar
120 ml cold water
pinch of cardamom
fresh raspberries
mint leaves
edible gold leaf
festive straws
(optional in summer: ice cubes)
Our smoothie is called a Lassi in India and there they make them much prettier than we do here. We mix fruit and yogurt together and that's it. But in India they subtly add spices, then sprinkle the Lassi with edible gold leaf and add fresh fruit & mint leaves as garnish. Really festive for Diwali!
How to make a Vanilla Lassi
Mix the yogurt until smooth.
Weigh the sugar and add it to the mixture.
Add the vanilla and the water.
Finally add the cardamom and mix it all frothy.
Decorate the Lassi with raspberries, mint leaves, gold leaf sprinkles and cute straws.
