1.5 liter water
3 vegetable stock cubes
250 grams of carrots
1 large leek
small cauliflower
2-3 spring onions
bunch of flat parsley
205g minced meat with spices
sea salt to taste
freshly ground black pepper
little splash of milk
stale breadcrumbs
Today the weather is not great, because March is stirring its tail, it is quite chilly outside. Time for a tasty vegetable soup, like grandma used to make us. First we go outside, we usually walk through the Kralingse Bos. When we come home tired but fresh from the outdoors, we can think of nothing better than grandma's fresh veggie soup.
We have made 2 adjustments, the marrow bone and the streaked beef pieces, from which grandma first made broth, we have replaced with vegetable stock cubes. Less fat and therefore healthier!
How to make Gran's fresh vegetable soup
Crumble the bouillon cubes in cold water.
Turn the heat on low and dissolve the cubes.
Clean the carrots and chop them.
Wash the parsley and chop it finely.
Cut the spring onions into rings.
Rinse the chopped soup vegetables a moment.
Drain it and then add it to the pan with the broth.
While the vegetables come to the boil slowly you make small meat balls
Season the minced meat with spices, salt and pepper.
Knead with a splash milk and bread crumbs.
Roll the minced meat into small balls.
Add the meat balls to the vegetable soup.
Let the vegetable soup simmer for 20-25 minutes.
Serve gran's vegetable soup with a fresh baguette.
