150g butter
100g golden caster sugar
175ml maple syrup
200g rolled oats
100g sultanas
10 dried apricots
5 dried figs
2 tbspoons almonds, ground
Healthy and tasty are Nigel Slater's fig flapjacks, with lots of fruit and fibers. Lovely with a cup of tea or coffee but also for a school snack, in the lunch box when summer break is over.
How to make Nigel's Flapjacks
Ground the almonds.
Chop the figs and apricots.
Melt butter, sugar and syrup.
Stir in the rolled oats.
Stir in the figs, apricots and sultanas.
Sprinkle on ground almonds, stir it in.
Line the molds with waxed paper.
Preheat the oven to 180°C
Fill the molds and press down.
Trickle some syrup on top of the bars.
Bake them for 25-30 minutes.
Cool on a wire rack.
Lift the flapjacks from the mold, roll in strips of waxed paper.
Pack some flapjacks for next day in the lunch box.
