75 grams butter (room temperature)
75 grams of fine sugar
1/2 small free-range organic egg
1 teaspoon vanilla extract
150 grams (Zeeland) flour
1/2 teaspoon baking powder
Decorative icing sugar, for sprinkling
blue, green, yellow rolled fondant
some water, to stick
black edible felt-tip pen
Tomorrow is Earth Day! We're baking delicious cookies today to celebrate tomorrow that we have such a beautiful earth. Yesterday we already participated in a clean up day, together with the little monsters. They deserve these yummie cookies, they worked very hard! it will be a fun surprise!
How to bake Earth Day Biscuits
Beat butter and sugar until creamy.
Beat in the egg and vanilla.
Sift in flour and baking powder.
Knead it all until well combines.
Wrap the dough thoroughly into cling film
Place the dough 1 hour in the fridge.
Knead the dough and roll it until 1cm thick.
Cut out circles of 6cm diameter.
Place baking paper on the baking tray, place the biscuits on top and place the tray 30 minutes in the fridge
Preheat the oven to 170°C
Bake the biscuits for 12-15 minutes.
Let them cool on a wire rack.
Meanwhile roll the icing thinly.
Cut circles out of the icing.
Stick the circles on with drops of water
Cut out one yellow circle, the sun!
Stick triangles of fondant icing on the sun, the rays and give the sun a face.
Cut continents, eyes and roll mouths, stick it all on the biscuits.
