225g soft butter
225g caster sugar
4 large, free-range organic eggs
1 teaspoon vanilla extract
225g self-raising flour
a dash of milk
Filling:
jam and whipped cream
Decoration
fresh fruit, sprinkles, rolled fondant
For a little birthday boy we bake a Dinosaur cake. It is quite a job, we bake 2 cakes because we want a nice high cake and not such a boring flat one :))). We bake the cakes 1 by 1. But if you have 2 of the same cake tins you can easily bake the 2 cakes at the same time, then you just double the recipe. Our cake tin is 20cm in diameter.
How to bake a birthday cake
Beat the butter with the sugar until it is creamy.
Then beat in the eggs well, add them one by one.
Scrape to clean the side in between and beat it in.
Aslo beat the vanilla into the mixture.
Scrape the side clean again.
Weigh the flour and stir in the salt.
Sift in the flour in parts.
Fold the flour into the mixture..
Finally add the milk
Also fold in the milk.
Only grease the side, with butter.
Preheat the oven to 180°C
Spoon the batter into the baking tin.
Bake the cake(s) for +/- 25-30 minutes.
Check with a skewer in the middle.
Let the cake cool in the baking tin.
Remove the side after 10 minutes and let the cake(s) cool completely.
