We're baking Half Moons

Eid-al-Fitr and Biscuits

Shopping list
250g (Zeelands) flour
80g icing sugar
1 vanilla pod
2 free-range organic egg yolks
1½ teaspoon vanilla sugar
pinch of salt
100g ground almonds
200g butter
50g caster sugar
1 tablespoon vanilla sugar

For Eid al-Fitr we bake half moons, delicious cookies made from wheat flour and ground almonds. Crunchy cookies with a thin layer of sugar around them. We serve them with mint tea and then it's a little party here too.

How to bake Half Moon Biscuits

Stir icing sugar and vanilla sugar into the flour.

Stir until flour and sugars are well combined.

Add the eggyolks and the butter cubes.

Kead it all by hand until mixed properly.

Form a flat disc of dough.

Wrap the dough, place it 1 hour in the fridge.

Stir sugar and vanilla sugar together.

When the hour is up, fetch the dough

Preheat the oven to 175°C and place baking paper on the baking tray

Knead the dough briefly.

Weigh pieces of 20g.

Roll and shape it into moons.

Bake the biscuits in 10 minutes.

The edges have coloured light golden,

Cover the hot biscuits in sugar.

Let cool first on the baking tray.
