Shopping list for the Biscuits
75g butter (room temperature)
75g caster sugar
1/2 free-range organic egg
1/2 teaspoon vanilla extract
125g(Zeeland) flour
1/2 teaspoon baking powder
Shopping list for Royal Icing
1 pasteurized egg white
1 teaspoon lemon juice
extra egg white, to thin, if needed
a drop of blue gel food coloring
3 chocolate buttons (six was too much)
We think it would be fun to bake something tasty today, on Earth Day. We’ll have a cozy tea party when the little monsters come home from school and read a lovely book to them. So, we are going to look for a nice book that fits well with this important day.
And then we are going to bake the little monsters’ favorite biscuits (our basic biscuits). We have a cute tiny dragonfly cookie cutter. That seems like a nice start to us, now that the habitat of our garden visitors is getting smaller and smaller. A good topic of conversation over a cup of tea with biscuits!
Here is how to make cute Dragonfly Cookies for Earth Day
Fetch the dough.
Knead it briefly.
Roll it out, not to thin.
Cut dragonflies from the dough.
Dip your cookie cutter in the flour, then the small biscuit will come out more easily
Put baking paper on the tray and place the biscuits on top.
Place the biscuits in the fridge for 30 minutes, so they won't run out.
But cover the biscuits well, with a clean tea cloth.
Preheat the oven to 175°C and slide the baking sheet into the middle of the oven
Bake the biscuits for 10-12 minutes.
Let them first cool on the tray.
Then completely on a wire rack.
Make the Royal Icing in advance.

On Earth Day, we use disposable piping bags. (but we do use them for at least a year, so they don't go in the trash after just one use)

Spoon half into a small piping bag.
Put it into a piping bag as well.
Pipe thin stripes of blue onto the bodies.
Let the icing first dry well.
Then pipe white wings onto the Dragonflies..
Melt the chocolate au bain marie (3 is enough!)
Dab little chocolate eyes onto the heads and let it dry.
