150g chicken fillet
2 sweet and sour apples, such as Elstar
½ lemon, juice only
1 teaspoon liquid honey
150g red and white seedless grapes
4 spring onions, cut into thin rings
2-3 tablespoons roasted walnuts
iceberg lettuce, roughly torn
200g organic yogurt
1 garlic clove, pressed
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon clear honey
2 tablespoons fresh, finely cut chives
sea salt & freshly ground black pepper
We make a fresh, light salad with lots of fresh fruit and vegetables and a low-fat dressing. It is just what we need after the holidays. Moreover, this salad is super tasty and very healthy too, if you prefer vegetarian you kan replace the chicken with tofu. You may want to serve the salad with sourdough bread.
How to make a New york chicken & apple salad
Fry the chicken until cooked through,
Let the chicken cool and rip it in pieces.
Crack and chop the walnuts.
Roast the walnuts for a few minutes.
Heat the dry frying pan, place the walnut pieces in the pan and shake occasionally. After a few minutes they are ready, set them aside to cool.
Wash the grapes, allow them to drain.
Squeeze half the lemon.
Slice the spring onions finely in rings.
Peel and core the apples
Cut the apples in thin slices.
Add the lemon juice.
Add the honey.
Fold in the onions and grapes.
Put the salad into the refrigerator and make the dressing:
Pour the yogurt into a jug
Add the garlic to the yogurt.
Add the vinegar also.
Then add the mustard.
Stir all firmly into the yoghurt
Now add the chives.
Almost forgotten! The honey.
Stir the dressing until combined.
Get the salad from the fridge and add the chicken and the salad leaves
Toss the salad with the dressing.
Optional serve the salad with toasted sour dough bread.
