Shopping list, for 6 cupcakes
125g granulated sugar
125g butter (room temperature)
2 free-range organic eggs (room temperature)
1 teaspoon vanilla essence
125 g self-raising flour, sifted
3 tablespoons milk
fondant icing
icing sugar, to dust
Today is our last day off, tomorrow the Christmas holidays will be over. The mini-monsters want to see their friends again, make school after three weeks off? Hmm, let's see! We are already baking cupcakes, for after school tomorrow :))
Here is how you make back to school cupcakes
Beat the butter and sugar creamy.
It should look like this.
Beat in the eggs one by one.
Add the vanilla extract and beat in.
Sift the flour.
Add it in 3 parts.
Flod the flour into the butter mixture.
Finally add the milk.
Fold it in too.
Spoon the batter in the paper cases.
Bake the cupcakes 15 - 20 minutes.
While the cupcakes cool, first in the tin and then on a wire rack, you cut out the fondant icing
Sprinkle your workspace with icing sugar and roll the icing thinly
Cut out circles.
Stick on the cupcakes.
Cut thick white rectangles.
Roll a piece of coloured fondant.
Fold it around the white part.
Roll apples of yellow and red.
Roll pencils of various colours.
Stick a book, pencil and an apple on each cupcake, using a drop of water
We miss 1 cupcake already ... ;)
Write letters on the books.
