100g soft, unsalted butter
100g caster sugar
2 free-range organic eggs
1 teaspoon vanilla extract
30g corn flour
300g plain flour
for Royal Icing
225g icing sugar
45g pasteurized egg white
1 teaspoon lemon juice
foodcolouring black and orange
Optional: light blue fondant icing
It is Sunday and it is cold outside! Today we bake cute winter cookies with the mini monsters. Snowmen and flakes really suit the time of year, although we haven't seen a flake outside yet ;)) But anyway, it's cold outside and then a nice, warm cup of fox tea with these yummy cookies will be received really well.
How you make the Winter cookies
Put butter and sugar into a bowl.
Beat it creamy in 4 minutes.
Beat in the eggs one by one.
Beat in the vanilla extract.
Put flour, baking powder, corn flour in a bowl.
Sift it all together.
Fold it into the mixture in 3 parts.
Knead the dough a moment.
Wrap the dough in cling film.
Put 30 minutes in the fridge.
Roll out the dough.
Cut out circles.
Place the circles 10 mins. in the fridge.
Bake the biscuits 7 - 10 minutes.
Let the biscuits cool on the baking tray for 15 minutes
How to make Snow Men
Place the biscuits on a wire rack.
Put the ingredients in a bowl.
Stir the royal icing.
Spoon it into a piping bag.
Pipe an edge on the biscuits, let dry.
Fill up the circle with white icing.
Pipe on eyes and an orange nose.
and allow the icing to dry completely in between each step
How to make the Snowflakes
Roll the fondant thinly.
Cut out circles.
Stick on the biscuits.
Pipe on snowflakes.
Allow the snowflakes on the Winter biscuits to dry completely.
The Winter biscuits turned out supercute!
