1 roll fresh puff pastry
100g cream cheese, softened
1 tablespoon caster sugar
½ teaspoon lemon zest
1 teaspoon vanilla extract
250g fresh strawberries, hulled and halved
125g fresh raspberries, halved
2 peaches, peeled and in slices
1 small free range organic egg
½ tablespoon water
1 tablespoon icing sugar, optional
We bake a summer children's favourite, delicious with fresh fruit and ready quickly. We choose sweet fruit, of course!!, but you can use any fruit on it. With, for example, raspberries, banana and blueberries or kiwi, mango and strawberries it is also super tasty. We chose what we already had in the fridge. This fruit pizza is also perfect for a picnic.
How to make the Fruit Pizza
Wash the strawberries then drain them.
Remove the hulls and halve them.
Cut the raspberries in half, the nectarines into slices.
Beat the egg with the water and put all aside.
Cut a circle out of puff pastry.
Score a smaller circle in it, do not cut through!
Prik holes in the smaller cirkel, using a fork.
Put cream cheese and vanilla in a bowl.
Add the lemon zest to it.
Mix it until combined.
Spread a thin layer over the smallest circle.
Preheat the oven to 200°C / 180°C Fan
Press the fruit gently into the cream cheese.
Brush egg wash on the rim.
Bake the fruit pizza in 15 - 20 minutes golden.
Let the fruit pizza cool for 5 minutes on the baking tray
Allow to cool completely on a wire rack.
Sprinkle (optional) some powdered sugar over the fruit pizza.
