2 tablespoons melted butter
250 ml milk
2 free range organic eggs
250g all purpose flour
a pinch of salt
2 - 3 gold Gold Reinettes
2 - 3 tablespoons light brown sugar
a teaspoon cinnamon
large splash of maple syrup or to taste
butter to fry in
Just over the threshold of the new year, we bake pancakes for the mini monsters. Because we have such a nice light recipe from Sweden and we have fresh Goldreinetten, apples that are still in season. Very cozy, such a delicious pancake lunch!
How to make Swedish pancakes with caramelized apples
The preparation
Core and peel the apples thinly.
Cut the apples into cubes.
Melt the 2 tablespoons butter.
How to make the batter
Pour the melted butter, milk and eggs in a big bowl.
Whisk in the flour and the pinch of salt.
Whisk until lump free then allow the batter to rest for a moment and start on the apples
Melt a small piece of butter in a frying pan.
Add the appels to the butter.
Sprinkle with brown sugar and cinnamon.
Stir the maple syrup into the apples.
Caramelize the apples on medium high heat.
Keep the apples warm on low heat.
Melt a piece of butter in another frying pan.
Pour a ladle of batter into the pan then move the pan around so that the entire bottom of the pan is covered with batter
Fry the pancakes on medium heat light brown on both sides.
Serve the pancakes with apple and a pinch of cinnamon.
