Chocolate Chip Banana Muffins

3-4 ripe bananas, mashed
165g light brown caster sugar
2 free-range organic eggs L (room temp.)
55g melted butter
1 teaspoon vanilla essence
215g all-purpose flour
1.5 teaspoons baking powder
100g chocolate (buttons) + extra

This weekend, we make banana muffins with chocolate chips, also a favorite of the little monsters. We keep some aside in the freezer so they can take one to school on Friday, when they may bring a treat. These muffins quick to make, so perfect for the weekend. Make something tasty and little time spent in the kitchen ;))

How to make Chocolate Chip Banana Muffins

Preparation:
Add flour and baking powder to large bowl and stir until combined, set aside and preheat the oven to 175
°C

Mash the bananas

Mix the banana mash with the sugar.

Mix in the eggs.

Add the vanilla essence.

Beat in the melted butter briefly.

Add the flour mix in one go, fold in lightly.

Chop the chocolate finely. if needed.

Fold briefly into the batter.

Fill up the cases to 3/4 full.

Tap the tin on your work space.

Bake the muffins for 20-25 minutes.

Check if the muffins are done by inserting a skewer, which should come out clean

Allow the muffins to cool in the baking tin for 10 mins., then on a wire rack.

Brew a lovely cup of tea to go with the choclate chip-banana muffins.
