75g butter (room temperature)
75g caster sugar
1/2 free-range organic egg
1/2 teaspoon vanilla extract
125g (Zeeland) flour
1/2 teaspoon baking powder
You also need:
green and black fondant icing
edible gold paint
the cookie cutter
You can easily bake these funny old-school Leprechaun hats with the kids. You can decorate them with fondant, marzipan, or royal igni. We are using fondant today because that remains the mini-monsters' first choice! They love to help with decorating the biscuits.. P.S. The link to the funny cookie cutter is at the top of this blog.
Here is how to make these Leprechaun Hats
Make dough according to the recipe.
Lightly grease your baking tray.
Dust the baking mat with flour.
Roll the dought to 1 cm thickness.
Preheat the oven to 175°C and cut out the hats from the rolled out dough
Place the hats on the lighly greased baking tray.
Bake the cookies for 10-12 minutes, or until the edges turn light brown
Allow the biscuits to cool a moment on the baking tray, and then move them to a wire rack to cool completely
While the biscuits cool you can start to work on the decorations
Dust the clean baking mat with icing sugar.
Roll the icing as thin as you can and cut out the hats.
Stick the icing with a drop of water onto the biscuits.
Allow the icing on the hats to dry well on a wire rack.
Thinly roll out a piece of black icing.
Cut it off straight on 3 sides.
Cut off small strips from the straight side.
Brush some water on the underside.
Press the strips onto the hats.
Cut off the strips to size.
Paint tiny buckles on the hats .
Because the buckles need to be very small and thin, we painted them on with a wooden skewer, that gave the best result
Allow the edible gold paint to dry thoroughl;y.
We go and make the tea already!
