½ cucumber + 1 onion
250g tomatoes
100g rocket
50ml olive oil
3 tablespoons red wine vinegar
sea salt & freshly ground pepper
50 gram pecorino romano
bread to taste
knob of butter
The Italian anti-pasti are often also very nice lunch dishes, like this crunchy fresh Panzanella bread salad for instance. With the salty cheese on top it is an excellent choice for our Mother's Day picnic. Panzanella it is!
How to make Panzanella
Wash the rocket and drain it really well.
Slice cucumber, onion and tomato thinly.
Place rocket in a bowl, onion, cucumber, tomato on top
Stir a dressing of oil, vinegar, salt & pepper.
Pour the dressing over the salad, scatter with the cheese.
Cube the bread and bake it brown in the knob of butter.
Give breadcubes on the side, served on the salad they will get mushy.
Also tasty with thick slices bread instead of bread cubes.
Place the salad in little boxes to take on the picnic.
