250ml whole milk
20g butter
25g caster sugar
2 organic free-range eggs
50g plain flour, sifted
1 teaspoon vanilla extract
1 teaspoon cinnamon powder
To serve
30g caster sugar

Today we’re baking small tartlets from Portugal called *Queijadas*. They aren't tartlets in the way we usually picture those in the Netherlands, but they are incredibly delicious. We’d be inclined to describe them as a sort of small pancakes, though that’s not quite right either.

Just give them a try, and you can taste for yourself how good they are. It’s also fun to see how they puff up into lovely little spheres in the oven—though, unfortunately, we can’t show you that in the photo's. As soon as you open the oven door, they go poof and are deflated :)) (Like little pancakes!)

How to make Portuguese Queijadas
Melt the butter in the milk on low heat.
Beat the eggs with the sugar
Until the mixture is frothy and pale of colour.
Add the sifted flour to the egg mixture.
Add the vanilla extract.
Add the teaspoon cinnamon powdertoo.
Remove the melted butter mixture from the heat.
Add it to the mixing bowl as well.
Mix until it's well combined.
Pour it using a jug  into the baking form.
Bake the tartlets for 25-30 minutes.
The tartlets are cooked when they are golden brown
Let the tarts cool briefly in the mold.
Take them gently out of the mold.
Sift the sugar with cinnamon and stir it.
Sift cinnamon sugar over the Queijadas.
Serve the Portuguese tartlets with tea and bake the second batch.
Delicious!
