Surinamese Marbled Cupcakes

Shopping list for 12 cupcakes
4 organic eggs
180g sugar
200ml sunflower oil
200g all-purpose flour
2 sachets vanilla sugar
1 sachet baking powder
50ml milk at room temperature
2 tablespoons cocoa
At a Surinamese friend's house, we are getting marbled cupcakes; no party is complete without them, she says. She gave us the recipe, and on this festive day of Ketikoti, we are going to bake them. Because they are so delicious now we share the recipe with you! (The whipped cream isn't in the recipe, but that's what the little monsters like ;))

Mix the eggs with the sugar until frothy.
Pour the sunflower oil into the egg mixture and mix it through.
Put the flour, vanilla sugar and baking powder into a clean bowl.
Stir it together until all is well combined.
Gradually fold the flour mixture into the egg mixture.
Lightly fold it in, in small amounts at a time.
Finally add the milk and fold it into the batter as well.
Place cupcakes cases into the baking tins.
Divide the batter between 2 bowls.
Add the cocoa to one of the bowls.
Stir it in until it is well combined.
Preheat the oven to 175°C
Spoon vanilla batter into the cases.
Fill up to 3/4 full with chocolate batter.
Pull a wooden skewer through the batter.
Bake the cakes for 20-25 minuets until cooked.
Do the skewer test to see if the cupcakes are done:
Insert the skewer into the center of a cupcake, if it comes out clean they are done
Let the cupcakes cool first in the baking tin, then on a wire rack.
Pipe cream onto the cupcakes if you like, but they are delicious without it too!
